Shrimp Fried Rice

This shrimp fried rice recipe can be made using a single skillet. For this recipe, chilled leftover rice is recommended. Fresh rice can be more difficult to work with as the rice may stick together in clumps or become mushy. Add two tablespoons of vegetable or canola oil to a pan and turn the heat up to medium-high. Once the oil is heated, add one pound of raw, thawed shrimp. Cook the shrimp until it’s cooked through. Remove shrimp from pan and set aside, leaving as much of the oil and cooking juices behind as possible. Add one cup of vegetables. A variety of vegetables can be used in fried rice, depending on personal preference. Carrots, peas, broccoli, green beans, red pepper, onion, and mushrooms are all delicious in fried rice. Cook veggies until softened, then set aside with shrimp. Add four cups of rice to the skillet, adding another tablespoon of oil beforehand if necessary. Spread rice evenly over the pan and let cook without stirring for two minutes. Turn the rice over and repeat this step. The rice should have some color to it. Then, make a well in the center of the rice and pour 3 large beaten eggs into the well. Stir quickly to scramble, then stir into the rice. Make a new well and add the shrimp and veggies back into the pan. Leave in well until heated, then stir to mix it with the rice and eggs. Add half a teaspoon of white pepper and a tablespoon of soy sauce, using less or more to taste. Mix seasonings thoroughly. Serve.

Shrimp Alfredo

To make this quick and easy shrimp alfredo, begin by preheating the oven to 450˚F.  Place twelve ounces of frozen popcorn shrimp on a baking sheet, making sure none are touching. Bake for ten to eleven minutes. Turn the shrimp after five minutes. Cook half a pound of fettuccine according to the directions on its package. If using fresh broccoli for this dish, add two cups’ worth to the pasta during its last two minutes of cooking. If using frozen broccoli, follow the directions on a one-pound package of broccoli and then set aside to add later. In a saucepan, combine four ounces of cream cheese cut into pieces and one-fourth of a cup each of grated parmesan and butter, and a quarter teaspoon of salt. Mix until everything is melted and evenly blended. Drain the pasta, then add the sauce. Add the shrimp and the broccoli is frozen is being used.
